Need Breakfast To-Go? Try These Easy Sausage Breakfast Bites

April 11, 2022

There is not much better than layering savory sausage, fresh eggs and sharp cheddar cheese onto a hot biscuit to start your morning.

As I continue to look for delicious recipes that are wonderful for meal prep (easy to eat on-the-go or bring to the radio station early in the AM) and keep the carbs down, these sausage breakfast bites have quickly become a favorite.

Get all the flavors of your morning biscuit with this easy to make and bake recipe.  These are wonderful to make for a big gathering or, you can be like me, and store them in the refrigerator or freezer.

Ingredients

  • 2 lbs – Ground Sausage
  • 16 oz – Shredded Cheddar Cheese
  • 8 oz – Shredded Parmesan Cheese
  • 2 cups – Almond Flour
  • 3/4 cup – Water
  • 2 – Eggs

Step 1 – Preheat oven to 350

Step 2 – In a large bowl, add all ingredients in the order listed

Step 3 – Mix until well blended (I like to use my hands)

Step 4 – Use an ungreased round muffin or square brownie pan (Love using that square pan)

Step 5 – Portion fill cups with mixture (about 4 oz servings)

Step 6 – Bake for 20 minutes

Step 7 – Turn on upper broiler and let broil for 5 minutes

Step 8 – Remove from oven and serve or let cool to store

Makes Approx. 20 servings
