Ingredients:

Instructions:

Preheat oven to 400°F.

In a large bowl, toss carrots with olive oil, maple syrup, cinnamon, salt, and pepper.

Spread evenly on a baking sheet lined with parchment paper.

Roast for 25 to 30 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.

3. Baked Apple Crisp

Ingredients:

5 medium apples, peeled and sliced

1 tablespoon lemon juice

1 teaspoon cinnamon

1 cup rolled oats

½ cup brown sugar

½ cup flour

½ cup melted butter

Instructions:

Preheat oven to 350°F.

In a bowl, toss sliced apples with lemon juice and cinnamon. Spread evenly in a greased baking dish.

In another bowl, combine oats, brown sugar, flour, and melted butter to form a crumbly topping.

Sprinkle the topping over the apples.

Bake for 35 to 40 minutes or until the top is golden brown and the apples are bubbly.

Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
